Gelato uses less fat and is always made with fresh milk rather than heavy cream.

Gelato is served at a slightly warmer temperature, which enhances the flavours.

Real ingredients

My authentic Italian gelato uses fresh Guernsey red milk, fruit, real pastes and variegati. Many industrial ice creams rely heavily on flavourings and stabilisers.

Craftsmanship

Gelato is made in small batches every day by an artisan. It doesn’t come from a factory – it comes from skill, tradition, and passion.

All Fava’s gelato is gluten free. In my catalogue you’ll find all the flavors divided into categories:

  • sugar-free

Choose your favorite and message me: I’ll prepare everything fresh in my workshop and we’ll arrange delivery. We also offer gift vouchers, so you can give the gift of our delicious gelato to a loved one.

The Story of Fava’s Ice Cream

My name is Marco, and I had been working in the appliance repair industry since 1994.

In 2017, I moved to Guernsey, where I continued my business… but my passion for gelato has always remained with me.
It all began many years ago in Brescia, with a simple Simac home gelato maker. That machine was the first step on a journey of curiosity, experimentation, and a lot of enthusiasm.

Furthermore, I was fortunate enough to grow up alongside a dear friend who has been making gelato in Spain for over 18 years: he taught me the basics and true technique of artisanal gelato.

In May 2024, I turned that passion into reality by opening my own shop: Fava’s Ice Cream.

Why "Fava's"?
The name comes from my surname, Favalli.

In Brescia—as in many parts of Italy—it’s common to call people by their last names, and if it’s too long, they shorten it.
So Favalli has always been simply Fava.

When it came to choosing a name for my ice cream, I wanted something that truly represented me, that spoke to my origins and my history. And so Fava’s Ice Cream was born.

Why "Ice Cream" and not "Gelato"?

When I arrived in Guernsey, I discovered that many people didn’t know what Italian gelato was.

From a little research, I realized that using the word “gelato” would create confusion: many people generically associated it with a cold dessert, without knowing the true difference.

To make it clear what I do, I chose to use the term Ice Cream, even though I know that gelato and ice cream are not the same thing.
My product remains 100% Italian artisanal gelato, handmade, natural, and made to order. The name is simply there to make me understandable at first glance in a country where the word “gelato” is not yet widely known.
